Curry with Chicken Tomato and Yogurt

Ingredients:

500g chicken thighs cut in cubes

2 medium onions, finely sliced

1/2 cup plain yogurt

1 medium tomato, finely diced

1/2 cup oil

2-3 tblspn Shan Curry Powder, dissolved in 1/2 cup water

1-2 cups water

Method:

  1. In a frypan, heat oil, fry onions until golden. Add chicken and curry powder. Stir fry for a few minutes.

  2. Add yogurt and tomato. Stir fry for a few minutes.

  3. Add 1-2 cups water. Cover and cook on low heat until the chicken is tender.

  4. Serve with boiled rice.

Serves 4

Optional: add any of your favourite vegetables
