Vegetable Frittata

Ingredients:

2 red onions, cut in wedges

1 zucchini, cut into rounds

1 red capsicum, cut into strips

200gram butternut pumpkin, peeled and diced

1 tbsn oil

1/2 head broccoli, break into small florets

50gram beans, cut in half

6 eggs, beaten

6 cherry tomatoes, halved

1 tspn oregano

handful fresh basil leaves

black pepper

Method:

  1. Preheat Oven to 180 degrees Celsius

  2. On a roasting tray - mix onions, zucchini, capsicum, pumpkin with oil. Place in the oven for 20 - 30 mins til soft

  3. In a saucepan, boil broccoli and beans til just tender, then strain

  4. In a frypan (that is suitable to be placed in the oven), oil very lightly and place the roasted veggies evenly distributed. Add broccoli and beans. Add beaten eggs. Add tomatoes on top. Cook in pan, til the eggs have set on the bottom. Now put the pan in oven so the top of the eggs can set for 20 minutes.

  5. When cooked, place basil leaves and basil on top.

Serves 4 - 6…it depends on the size of the slice!!!
